Amazing Appetizers, Il Bikini Ristorante, Vico Equense (Na)

My  2016 bikini season kicked off in a colorful and flavorful way. Here's a look at three of Chef Mimmo De Simone of Il Bikini Ristorante appetizers that found their way to my table one sunny summer afternoon.

First up, not technically an appetizer - but a benvenuto.


A welcome featuring a lightly calzoncino stuffed with mozzarella cheese and a fried anchovy.



Next, two appetizers beginning with a tasty unexpected surprise.  Scallops and foie gras.






Followed by red mullet and creamy eggplant.






Amazing...

Scarpetta. ..the word alone makes one's taste buds jump for joy.  Scarpetta, little shoe, is an act of love at the end of a meal. A show of respect and admiration performedw ith a piece of great bread and the remnants of a fantastic sauce left on the plate at the end a a course. That is the spirit behind Franco Pepe' s latest pizza - La Scarpetta.   Pepe's soft pizza dough paired with an amazing ragu tomato sauce.  For the sauce, Pepe chose three tomato varieties and slow cooked them so that they fused together to make an incredible tomato sauce. This sauce is not cooked in the oven with the pizza dough, but added on top afterwards.  Then a couple of shavings of Grana Padano cheese (aged 12 and 24 months) Just one more taste of happiness courtesy of Pepe in Grani.. .

Is There Life After Aglianico?

About a month ago, friend and mentor Fabrizio Erbaggio, and I were having a conversation about a wine tasting that was held at Ciao Vino. I mentioned that I didn’t really like one of the reds that he served. He asked me why. I said that it didn’t taste like Aglianico. Wrong answer? OK, I know over the past couple of years I have been playing it safe. I found a wine that I liked and I stuck with it. If it ain’t broke, don’t fix it, right?
